I’m writing this post from the airport while waiting for my last flight home. It’s been very long and bumpy 40+ hour trip so far. While I was excited about my final flight home last night, they announced that our plane had some mechanical issues. After a few hours of delay, they finally fixed the issue and we were up in the air on our way home. Next thing you know, we had turned around and headed back where we left. Apparently, there was still something wrong with the plane. Scary, I know! We landed safe and sound, and were back to a waiting game! It didn’t get any better from here. The flight was cancelled; all hotels were full, another sleepless night on the chair! Oh well, I will get over it. I just want to have an extra strong drink now, maybe even two!
Speaking of a drink! Today’s cocktail is super easy. The star of the show is one of popular summer staples: watermelon. Nothing is more refreshing than a cold watermelon on a hot day. Combine it with lime juice and rum, and you’ll get an absolutely refreshing and fun drink to serve at your next dinner party on the patio. With beautiful balance between sweet and tangy, this drink will please everyone’s palate.

Frozen Watermelon Daiquiri
Ingredients
- 8 cups watermelon chunks frozen
- ¾ cup light rum
- 6 tablespoons lime juice from about 2-3 limes
- 6 teaspoons sugar
Instructions
- Blend all the ingredients in a blender until smooth.

I was expecting it to be the consistency of a daiquiri and instead it was like drinking watermelon water. Everything separated. The watermelon I used had been frozen for a couple of hours. Nowhere in your directions do I see how long the fruit was supposed to be in the freezer. So basically I ended up with an unappetizing blender full of liquid with the consistency of water.
