Can you imagine summer without a lemonade? I’ve started drinking this summery drink long before spring had sprung. And it happens every year… (I blame our long cold ND winters!) Though I love tangy, refreshing lemonade on any day!

Today’s version isn’t your average lemonade though. We’re adding a fabulous twist: KIWI!! Naturally sweet and mildly sour, this delicious fruit is absolutely great addition to traditional lemonade, without altering its classic lemonade flavor we all know and love.

Now let’s talk about juicing lemons for a second.

Don’t we all love juicing lemons? 😉

In the past, I used my Omega juicer to juice lemons, but that quickly became a dreary chore to peel and cut them. And I recently purchased this attachment for my KitchenAid stand mixer, and I’ve been so obsessed. Making lemonade, or lemon meringue pie, or lemon curd has never been so easy!!!

But you can juice lemons using a regular citrus juicer or even a fork. Before cutting lemons, make sure to roll them on counter pressing with your hand. People also suggest microwaving it, but I never tried that. And another tip: cut the lemons length-wise to get the most juice out of a lemon. By the way, this kiwi lemonade makes a great pitcher cocktail for your dinner party on patio. Place a bottle of vodka next to the lemonade, and let your guests doctor their own drink. Or, you can mix in 1.5 cups of vodka in advance. Hard lemonade, anyone?

Hosting a summer brunch? How about LEMONADE MIMOSA? Top a glass of lemonade with champaign, and voila!

Virgin or not, this refreshing and tasty drink is a sure crowd-pleaser! Not too sweet, not too sour, just right.

Ingredients

Simple syrup:

  • 1 cup 240ml water
  • ¾ cup 150gr sugar

For lemonade:

  • 1 cup 240ml fresh lemon juice (4-6 lemons)
  • ½ cup 120ml kiwi juice* (4-5 kiwis)
  • 3 cups 720ml water
  • 1 ½ cups 360ml vodka, optional
Note: I test all my recipes with both measurements for the most precise and accurate result!

Instructions

  • To make simple syrup, bring a cup of water to a boil in a medium saucepan.
  • Add sugar and stir until dissolved. Continue to boil for about 3 minutes.
  • Remove from heat and cool completely.
  • In a large pitcher, combine lemon juice, kiwi juice and water.
  • Stir in simple syrup and enjoy!
  • To make hard lemonade, stir in vodka.

*You can either juice the kiwi or blend the fruit with a fork.

    The kiwi is a cool idea to put a nice twist on lemonade (one of my fav summer drinks too). Also, although I have a juicer, I never thought of using it to juice lemons for lemonade…I’ve been hand juicing them but will definitely break out the juicer next time. Thanks for sharing the recipe 🙂
