Boozy Pineapple Popsicles

These vibrant and refreshing boozy pineapple popsicles are simple & easy, yet unbelievably satisfying treats for hot summer days!

Ingredients

  • 1/3 cup (65g) sugar
  • 3 cups cut-up pineapple pieces Note 1
  • 1/3 cup tequila Note 2

Instructions

  • In a small saucepan, bring 1/3 cup of water to a boil over medium high heat. Add sugar and stir until dissolved. Remove from heat and cool completely. That’s simple syrup.
  • In a blender, combine prepared simple syrup, pineapple chunks and tequila. Blend until nice and smooth.
  • Divide the mixture into popsicle molds and freeze until completely frozen. (Depending on type of popsicle mold you have, you might need to insert popsicle stick after 1 hour.)

Notes

Note 1: You can use fresh, frozen or canned pineapples.
Note 2: I recommend silver tequila for this recipe.
