This cool and minty watermelon fizz is perfect cocktail to quench your thirst on hot summer days!

Ingredients

  • 4 cups soda such as 7UP
  • 10 cups seedless watermelon cubes Note 1
  • ¼ cup fresh mint leaves
  • 1 cup (240ml) peppermint schnapps optional

Instructions

  • Pour 2 cups of soda into ice cube trays. Freeze. (This's optional, but I love it better than plain ice cubes.)
  • In a blender, blend 1 cup of seedless watermelon cubes and fresh mint leaves until smooth.
  • Strain the mixture through a fine mash sieve. This is an optional step, but some people don't like mint pieces in the drink.
  • Pour the strained minty watermelon juice back into the blender and add remaining watermelon. Blend until smooth.
  • To serve, pour the mint watermelon juice in a large pitcher with prepared ice cubes. Add the remaining soda and serve!
  • If desired, add peppermint schnapps and garnish with mint leaves.

Notes

Note 1: Choose a watermelon that has a nice yellow patch. The more yellow it is, the riper the watermelon is. Avoid the ones with pale white patches. Read the post for more tips on choosing a perfect watermelon.
