Light as air, divinity is a sweet & creamy Southern candy, a popular holiday treat. This recipe is easy to follow with time-tested tips & tricks for your success!

Make the Sugar Syrup

In a saucepan, mix together sugar, water & corn syrup. Cook the mixture on low heat, stirring continuously until sugar is dissolved.

Cook the Mixture

Turn the heat up to & continue to cook the mixture without stirring until it reaches 250°F on thermometer.

Beat the Egg Whites

As the syrup approaches 240°F, start whipping the egg whites. In a mixing bowl with whisk attachment, beat the egg whites until hard peaks form.

Add in the Sugar Syrup

Reduce the speed to low & slowly & continuously pour the hot syrup mixture in to the egg whites. Stir in vanilla extract.

Check the Consistency

Increase the speed to high & beat the mixture until it loses its gloss & holds its shape, Check the consistency after 15 mins.

Line the Baking Sheet

Line a baking sheet with wax or parchment paper & spray 2 spoons with non-stick cooking spray.

Let the Candies Set

Drop a spoonful of divinity mixture onto the prepared sheet. Push a pecan half on top of each divinity. Let the candies set at room temperature for up to 2 hours.
