These lemon poppy seed muffins have a bright, citrusy flavor and a sugary, sweet lemon glaze. Serve them for a delightful breakfast, brunch, or afternoon treat.
1
Whisk together flour, poppy seeds, baking powder & salt in a medium bowl. Set aside.
2
In a large mixing bowl with paddle attachment, beat butter and sugar on medium high speed until fluffy, about 3 mins..
3
Add the eggs, vanilla extract, lemon juice & zest. Beat for another 2 mins, or until nice & fluffy.
4
Add half of the flour mixture & mix until just combined.
5
Then stir in the milk, followed by the remaining flour mixture. Don’t overmix.
6
Divide the batter into 12 muffin cups. The muffin cups will be pretty full & that’s totally ok!
7
Bake for 15-18 mins, or until the inserted toothpick comes out clean.
8
Cool the muffins completely in the muffin pan before taking them out.
9
In a bowl, combine powdered sugar & lemon juice until smooth. Drizzle lemon glaze over the muffins & enjoy!
