Homemade sushi rice is easy to make & just as tasty as one from your local sushi restaurant. Here’re 4 rules to follow to make perfectly soft, sticky and fluffy rice.
Wash the rice under running cold water until the water runs clear. Drain & shake the excess water off. It’s crucial as rice to water ratio is important for the right texture.
Then place the washed rice in a saucepan & add water. Level the rice under the water so it’s nice & even. Cover with tight fitting lid & turn the heat to medium high. Bring it to a boil.
Once boiled, reduce the heat to low and cook for 10 mins, still covered. Then turn the heat off & let it sit for another 10 mins. Don’t open the lid the entire time!
Prepare the rice seasoning by mixing together rice vinegar, sugar & salt in a small dish until sugar is fully dissolved. Set aside.
When the rice is fully cooked, transfer the rice into a large dish.
Pour the rice seasoning over the rice. Gently mix everything with a wooden spatula, using a cutting & folding motion.
Then cover the rice with damp kitchen towel & prepare the fillings.
