Elevated version of a classic chicken Caesar salad. In 30 mins, you can make homemade ciabatta croutons, fresh chicken & creamy Caesar dressing all from scratch!
Spread the croutons in an even layer on the lined baking sheet. Bake for 10-15 mins. Remove from the baking sheet, & allow them to fully cool before adding them to the salad.
Add the homemade Caesar salad dressing ingredients to a mason jar. Blend the dressing ingredients using an immersion blender until smooth.
Drizzle both sides of the chicken breasts with 1 tablespoon of avocado oil. Season both sides liberally with salt, garlic powder, and oregano.
Add the chicken to the pan, & cook for 3-4 mins. Flip it & cook for another 3 mins. Remove it from the skillet & let it rest for at least 5 mins before slicing.
Chop the lettuce into bite-sized pieces. Combine the lettuce with half of the dressing, grated parmesan cheese & croutons in a bowl. Toss until evenly mixed.
Slice the chicken into strips or bite-sized pieces. Add the remaining dressing, and toss to combine. Serve the salad immediately, topped with extra parmesan!
