Last week, I bought a pack of Guinness to experiment in my kitchen just in time for St. Patrick’s Day. This Irish Shepherd’s Pie turned out fabulous! So I decided to challenge myself and use it in the baking. As I was brainstorming for ideas, I asked my husband which one he would prefer: brownies with Guinness, or lava cake with Guinness. His answer was “Both sounded great until you mentioned Guinness”. Haha, thanks hon, but that’s not helpful!

As you can tell from the photos, I settled on triple chocolate stout brownies. My test run turned out great, but lacked in the texture department. So I added some mac nuts, that I brought home from Hawaii. And BINGO! Perfectly tall and fudgy brownies with chewy mac nuts and sweet white chocolate chips.

These brownies are so incredibly rich, fudgy and delicious. You’ll noticed subtle traces of the stout and enhanced chocolate flavor. I added brown sugar to boost the malty flavor of the beer. And soft, slightly creamy macadamia nuts are just perfect compliment to the already tasty brownies.

Enjoy these decadent brownies with tall glass of milk, or if you’re like me, with a glass of Guinness. Perfection!

Triple Chocolate Stout Brownies

Ultra-rich triple chocolate stout brownies with macadamia nuts are fudgy and full of fun texture from nuts and white chocolate chips.

Prep Time:20 min

Cook Time:25 min

Total Time:45 min, plus cooling

Ingredients:

  • 2oz (60gr) semisweet chocolate
  • 2 tablespoons unsalted butter
  • 1/2 cup (60r) all-purpose flour
  • 1/4 cup (25gr) unsweetened cocoa powder
  • 1/3 cup (65gr) sugar
  • 1/3 cup (50r) light brown sugar
  • ½ teaspoon salt
  • 2 large eggs, at room temperature, beaten
  • ½ cup (120ml) Stout Guinness beer
  • ½ cup  (85r) white chocolate chips
  • ½ cup (70gr) macadamia nuts, coarsely chopped

Directions:

  1. Preheat the oven to 350 degrees F (175 degrees C). Line 8in (20cm) square pan with parchment paper.
  2. In a small bowl, whisk together flour, cocoa, sugar, brown sugar and salt. Set aside.
  3. In a double boiler, melt the chocolate with the butter. Let it cool slightly, about 5 minutes, and then stir in the beaten eggs. Add the dry ingredients and gently fold until it's mostly mixed. Pour in the stout. Mix in white chocolate chips and macadamia nuts, reserving a little to sprinkle on top. Pour the batter into the prepared pan. Bake for about 20-25 minutes, or until inserted toothpick comes out almost clean. About 15 minutes through the baking, open the oven and quickly sprinkle the reserved white chocolate chips and macadamia nuts over the brownie. Start checking for doneness after 18 minutes. 
  4. Cool completely in the pan on wire rack. Cut into 16 small squares before serving.

    • Thank you, Alanna. You’ve got to try this recipe. My husband, who wasn’t so sure about stout in the brownie, loved it. Stout intensifies the chocolate flavor beautifully. Let me know if you try this recipe. 😉
