Still can’t believe it’s already February! Valentine’s day is approaching. Love is in the air! Everywhere you go, you see red and pink, hearts and roses.  To celebrate love, all my recipes this month will have something red in it. I’m a newlywed, what can I say. All I want is to celebrate love! (By the way, have you read my post about my honeymoon in Hawaii yet?)

PLUS, as I mentioned in this post, I love red. Anything red automatically looks great to me. Today, I’m sharing with you one of my favorite salads. It’s delicious, healthy and super easy.

So, so good. Spinach + Strawberries= Perfection!

With every bite, you will get hearty spinach with mild tartness from the vinegar and slight sweetness from the strawberries. Pumpkin seed oil brings everything together adding a little nutty flavor.

Strawberry Spinach Salad

Slightly tart and mildly sweet salad with a hint of nutty flavor.

Yield: 2 servings

Ingredients:

  • 2 handfuls spinach
  • 5-6 strawberries
  • Pumpkin seed oil
  • Balsamic vinegar
  • Salt and pepper

Directions:

  1. Wash and dry spinach leaves. Hull and slice the strawberries.
  2. Plate spinach leaves and sprinkle strawberry slices. Drizzle pumpkin seed oil and balsamic vinegar over the salad. Salt and pepper to taste.

  1. Looks great. I used poppy seed and some sesame seed with white wine vinegar. Added little sugar and paprika also little vegetable oil. So it came out wonderful salad before dinner 🙂
