Today, I wanted to share with you one of my favorite breakfasts. I’ve been making this for years and will never get bored from it. It’s sort of french toast, but it’s savory version. Whenever I have some bread on hand, I serve this savory deliciousness for breakfast or brunch. It’s not as complicated as real french toast, so don’t get frightened. 

Here is the step-by-step instructions:

I know you will fall in love with this dish right away. With your first bite, you will know how heavenly soft they are. You won’t even miss sugary syrup and butter. In fact, some bacon strips would be ideal.

As with any french toast recipe, you don’t want to use soft sandwich bread. It’s just not sturdy enough to hold the eggs. Day old french baguettes are ideal for this recipe. By the way, I have shared very easy french baguette recipe a while back. Check it out, if you haven’t already.

Savory French Toast

These savory french toasts with melt-in-your-mouth soft center are perfect for weekend brunch.

Ingredients:

  •  French baguette
  • Handful spinach
  • 4 eggs
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Directions:

  1. Slice the baguette into 6 1-inch thick slices. Coarsely chop the spinach. Set aside.
  2. In a medium bowl, beat the eggs with a fork. Salt and pepper to your taste.
  3. Heat the olive oil in a large frying pan over medium high heat.
  4. Mix in spinach into the eggs. Soak the bread slices in the egg and pierce with a fork here and there. This will help to really soak the bread with egg mixture for soft center. (The secret to get the soft center is to pierce the bread slices with a fork when soaking in egg mixture.) Spread the spinach evenly on bread as well. 
  5. Place the bread slices on hot frying pan and cook until golden brown for about 2-3 minutes. Flip them and cook for another 2-3 minutes. Serve immediately.
