Mint and watermelon is one of the most refreshing and beloved flavor combos known to men. Drizzle some balsamic glaze over watermelon cubes and mint leaves, and you’ve got yourself a perfect snack. I was so obsessed with it last summer. …And now I’m totally craving it. Is it summer yet?

Ok, mint + watermelon isn’t just summer flavors though. Well, it is, but it doesn’t have to be served just on summer days! We’re gonna change that today.

Minty Watermelon Fizz, you guys!! It’s bubbly. It’s refreshing. And it’s totally appropriate for any kind of gathering! Even on dreary winter days. No, especially on dreary winter days. That gorgeous vibrant color alone screams party, and it instantly brightens the mood!

And you know what else goes well with mint and watermelon? Yay, you guessed it, 7UP!!

Truth be told, I don’t drink carbonated drinks often, but sometimes I just crave a bubbly drink. In fact, I do get that feeling frequently enough to keep a stash of 7UP in my pantry. Yep, 7UP is my soda of choice (…or do you call it a pop?). Anyway, I love how crisp and refreshing they are!

And that’s why it complements this minty watermelon punch so beautifully. Oh and that’s not it, you guys! To jazz it up further, we’re making 7UP ice cubes!! I know, it’s a super fab idea! I mean, why dilute the punch with regular ice cubes, when we can add more fizz with bubbly ice cubes, right? You’re welcome! 🙂

Now, let me show you how I made the drink.

It’s ridiculously easy. Well, honestly that’s why I was able to record the video. Otherwise who will be chasing after my 1 year old! (<- Yep, my little baby is now a toddler! Sob-sob.)

Whether you’re hosting a game day gathering, birthday party, bridal shower, baby shower, ANY occasion, hope this minty watermelon punch makes it to your menu! I know, your guest won’t be mad about it at all!

Oh, I almost forgot one more thing. You can add a splash of peppermint schnapps for grown-up cocktail twist. It’s mintier, boozy and oh-so-yum! Try it!

Minty Watermelon Fizz

This cool and minty watermelon fizz is perfect cocktail to quench your thirst on hot summer days!

Yield: 8 servings

Ingredients:

  • 4 cups 7UP
  • 10 cups seedless watermelon cubes
  • ¼ cup fresh mint leaves
  • 1 cup (240ml) peppermint schnapps, optional

Directions:

  1. Pour 2 cups of 7UP in ice cube tray. Freeze.
  2. In a large food processor or blender, process the watermelon and mint leaves.
  3. Strain the mixture through fine-mesh sieve.
  4. When ready to serve, pour the mint watermelon juice in a large pitcher with 7UP ice cubes.
  5. Stir in 7UP.
  6. If desired, add peppermint schnapps and garnish with mint leaves.
