Well, let me start by saying that I feel bad that I didn’t share this awesome recipe earlier this summer. BUT I got this fantastic idea last week. So let’s not waste time and let’s enjoy this treat every day for the rest of the summer. Ok?

There are so many good things are going on here. Crispy, crunchy, creamy, sweet, you name it, you got it!  All in one bite!

Did I mention you only need 3 main ingredients?! What?? Yes, aside from optional sprinkles and nuts for the topping, you will need rice krispies, dulce de leche, and ice cream! That IS IT! Choose whatever ice cream flavor you want, or mix ‘n match, like I did here. And you’re all set.

Oh, and couple hours of patience is the hardest step of this recipe. The reward is well-worth it though.

Mini ice cream pies

Mini ice cream pies for everyone! Only 3 ingredients to create the most fabulous summer treat.

Yield: 12 mini pies

Ingredients:

  • 3 cups (90gr) Rice Krispies
  • 8oz (225gr) Dulce de Leche
  • About 2 cups ice cream
  • Almond slivers, optional
  • Sprinkles, optional

Directions:

  1. In a large bowl, mix rice krispies with dulce de leche until well combined.
  2. Cover muffin pan with sheets of plastic wrap.
  3. Using a large cookie scoop, divide the rice krispies mixture into 12 muffin cups. (About ¼ cup of mixture in each muffin cup.) With the back of the cookie scoop, press the crust, creating a bowl. Put it in the freezer for 1 hour.
  4. Meanwhile, bring out the ice cream to soften.
  5. Fill the crust with softened ice cream and freeze for at least an hour.

It’s best to serve the mini pies within 24 hours, or the crust will be less crispy.

  1. I cook with my little nieces once a year when they fly in from LA to visit me in Boston. We alway cook together – some kind of sweet treat. This recipe looks like it might be just the thing! The only thing is I’ll have to figure out how to incorporate mini marshmallow in, which are their favorite.

    What is dulce de leche and where can I find it. Love your recipe!!!

    • Hi, Diane! I’m glad you love the recipe. You can make your homemade dulce de leche by boiling a can of condensed milk. I’ve shared my tips for this method in this post. If you don’t feel comfortable with boiling the whole can, you can also cook pour the condensed milk into a saucepan and cook it on stovetop until nice and dark. I’ve never cooked like that, so not not sure how long it takes.
