Well, hello there! Greetings from Denver airport. My 3-week vacation in Mongolia is coming to an end. I had an amazing time with my family and got to see just a few of my closest friends there. Because I get to see my family only once a year, every minute I spend with them is so precious to me. Though 3 weeks went by in a flash, I loved every minute of it.

Now, I just want this 30+ hour travel to be over. 8 more hours to go! I’ll spend this time wisely and will share one awesome appetizer with you. Hope you love some blue cheese and mushrooms. 😉

I seriously love mushrooms. And crostini is one of my favorite snacks/appetizers. Naturally, I put the two together with some blue cheese mixture in between! So much flavor!

And since I had some compound butter in the freezer, I used that too for even more flavor.

Crispy, crunchy bread slices with creamy pungent blue cheese and topped with earthy delicious sautéed mushrooms! I could snack on these all day long. Actually, I kinda did!

Blue Cheese Mushroom Crostini

Calling all mushroom and blue cheese fans out there! These blue cheese mushroom crostini are for you!!

Yield: About 12 crostini

Ingredients:

  • 1 baguette, sliced
  • 1 oz (30gr) herb butter*, plus 1 tablespoon
  • 8oz (225gr) mushrooms
  • 1/2 tablespoon olive oil
  • 2-3 cloves of garlic
  • 1 tablespoon red wine
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2oz (60gr) blue cheese 
  • 3 tablespoons (60gr) sour cream

Directions:

  1. Butter the bread slices on both sides. Grill the bread on both side until crispy, about a minute on each side.
  2. Slice the mushrooms into smallish pieces. 
  3. In a medium skillet, melt the butter and olive oil. Add garlic and cook until fragrant, 30-60 seconds. Add mushrooms and cook until they’re softened. Add sherry wine, salt and black pepper. Cook until most of the liquid is evaporated, about 3-5 minutes. Remove from heat and mix in half of the blue cheese.
  4. In a small bowl, mix together the remaining blue cheese and sour cream.
  5. To assemble the crostini, spread the sour cream mixture on the toasted breads and top with sautéed mushrooms.
