Attention, meat-lovers! I have super easy, meaty appetizer for you today.

Pork chops are pounded into thin layer, stuffed with juicy Portobello mushrooms and mozzarella cheese, then wrapped in bacon. Now, who doesn’t love bacon? Or cheese? Or anything mini (always the best)?

These little meat roll-ups are addicting. Salty, crispy bacon meets soft and juicy pork and melty cheese. Ah-mazing!

Meaty juicy Portobello mushrooms play two roles in this recipe. 1. Adds robust meaty flavor that goes especially well with bacon. 2. Injects its juiciness to the pork, preventing it from drying out. Although Portobello mushrooms often used in place of meat, I’m adding it to enhance the meat flavor and juiciness.

Again, this appetizer is for serious meat-lovers.

I have to mention another star of the show: smoky steak seasoning. I used “Chicago” steak seasoning from Penzey Spices, that I got when I was in Denver this summer. Its smoky flavor adds so much power to this appetizer. If you don’t have this seasoning, I highly recommend something similar with smoky flavor.

You might want to double the recipe, because if you’re like me, the half of it will be used for taste testing. Oops…

Bacon Wrapped Pork Roll-ups

Bacon wrapped pork roll-ups= meat lovers heaven! You need only 5 ingredients for this satisfying, but addicting appetizer.

Yield: 25 slices

Ingredients:

  • 6oz (150gr) pork chops (2 slices)
  • ½ teaspoon smoky steak seasoning (I used Penzey Spices “Chicago”)
  • ½ (1oz/25gr) big portabella mushrooms, thinly sliced
  • 1 string mozzarella cheese string, divided lengthwise
  • 3 bacon strips

Directions:

  1. Preheat the oven to 425°F (220°C).
  2. Pound the pork chops with meat tenderizer until it’s very thin, about ¼ inch (0.5cm). Sprinkle the steak seasoning evenly on one side of the pork chops. Place the sliced mushrooms in one layer on pork chops.
  3. Put the mozzarella cheese string on one end and roll the pork up. Wrap with bacon and secure the ends with toothpicks.
  4. Place the pork rolls on a baking sheet lined with parchment paper, or silicone mat. Bake them for 30-35 minutes, or until bacon is cooked.
  5. Transfer on the plate with paper towel to absorb the bacon fat. Cool slightly and cut into ½-inch (1cm) rounds.
