Whoa, did you watch that epic super bowl game? Sadly, we missed it! I know, such a bummer! We watched it until half-time, and decided to go for a walk and then dinner, thinking it’s clear who’s gonna win. Well, lo and behold, as we walked by a local restaurant we heard a loud cheer and learned that the game completely turned around and the score was 28-28. What?? It was 0-21 when we watched just 15 minutes ago! But on a bright side, we enjoyed a great dinner on our last night in Honolulu!

Hawaii was amazing as always. Grant loved it so much! And we were so carried away that I didn’t even get to share the recipes I was planning to share for your Super Bowl festivities. Oh well, better late than never, right?

I have one addicting appetizer for you today. My sis-in-law served it for Christmas dinner, and I was so obsessed with them ever since. I modified the original version a little though… Doubled the crackers and added cheese for even more indulgent snack. I mean, what’s not to love here? Cheese. Check. Bacon. Check. Crackers. Check.

And if you caught the video above, you’ve seen just how easy it’s to make them. Plus, you can make it ahead and reheat it right before serving. They’re also great at room temperature. Perfect party food, if you ask me.

Bacon Wrapped Cheesy Crackers

Bacon wrapped cheesy crackers – super addicting, super easy make-ahead appetizer with just 4 ingredients!
Prep: 15 minutes
Cook: 2 hours
Servings: 12 pieces

Ingredients

  • 6 thin bacon strips cut in half
  • 24 crackers
  • 12 slices cheese of your choice 1-inch squares
  • 2-3 tablespoons brown sugar

Instructions 

  • Preheat the oven to 250°F (120°C).
  • On a baking sheet lined with parchment paper, or silicone mat, arrange the bacon strips.
  • Layer cracker, cheese and cracker in the middle of each bacon strip.
  • Wrap the bacon around the crackers. Sprinkle a little bit of brown sugar where the bacon ends meet. Place the seam side down.
  • Sprinkle a little more brown sugar on top of each piece.
  • Bake for 1.5-2 hours, or until bacon is nice and crispy. (Quick version: You can also bake these at 350°F for 25-30 minutes. Cheese oozed out a bit more, but not too bad.)
  • Serve at room temperature.
  • Make ahead tip: Store the cooked bacon crackers in the fridge. And when ready to serve, gently warm up in the oven at 250°F (120°C) for about 20 minutes, or until warm though.

    I was looking for something different for a cocktail party. Made a sample today and I’m sure they’ll be a hit!! I also tried one with cream cheese and fresh sliced seeded jalapeños and no brown sugar. They were good too but for the party I think I’ll stick with your recipe!! Yum!
