Oh my gosh, I wish you were here in my kitchen to share this warm apple cranberry crisp with me right now. Filled with all sorts of fall flavors and topped with nutty-buttery-crunchy topping, this wonderful classic fall dessert fills your kitchen with sweet comforting aroma that lingers for hours. I could bake this every day just for that smell!

The balanced combination of sweet and tart flavors from apples and cranberries takes the classic apple crisp to whole another level. I just love the slight tartness from cranberries, you know. And the mixture of nuts gets toasted during baking and adds nice texture to the crisp.

And look at that beautiful festive color!! It really doesn’t get any better than this. Well, only if you top it with creamy rich homemade vanilla ice cream. 😉

It really takes no time to make this. Less than half hour of hands-on time, and the oven will do the rest for you. Easy-peasy!

Now, let’s talk about what kind of apples to choose for this crisp.

Since cranberries are a bit on a tart side, go with sweeter apples. For my first round, I used Pink Lady and Granny Smith apples. Pink Lady is sweet n’ tart and holds its shape during baking. Granny Smith is also tart and firm apples, great for baking. I liked it a bit tart like that, but it wasn’t a huge hit at the ranch. 🙂 Thus the testing continued… 

For sweeter crisp with a hint of tartness, I suggest to go with sweeter apples, such as honeycrisp, golden and/or red delicious. The combination of honeycrisp and golden delicious was the winner in my family!

Serve the crisp warm with a dollop of ice cream, or whipped cream! (And by dollop, I really mean to pile up the creamy goodness to your heart’s desire!) I admit it, I had mine with both ice cream and whipped cream a few times. (Don’t judge me. This dessert is mostly apples, so it’s good for you, right? 🙂 )

Apple Cranberry Crisp

Yield: 6-8 servings

Prep Time:25 min

Cook Time:45 min

Total Time:1 hour 10 min

Ingredients:

For topping:

  • 1/3 cup (40gr) all-purpose flour
  • ¼ cup (40gr) packed light brown sugar
  • ¼ cup (50gr) sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (preferably freshly grated)
  • ¼ teaspoon salt
  • 5 tablespoons (70gr) unsalted butter, chilled and cut into small cubes
  • ½ cup (60gr) pecan halves
  • ½ cup (50gr) slivered almonds

For filling:

  • 2lbs (1kg) apples* (I recommend a combination of Honeycrisp and Golden Delicious. See notes below.)
  • 1 cup (100gr) cranberries, fresh or frozen
  • ½ cup (100gr) sugar
  • 1 ½ tablespoon freshly squeezed lemon juice
  • Zest of 1 lemon

Directions:

  1. In a food processor, combine flour, sugars, cinnamon, nutmeg and salt. Pulse until combined. Add butter and pulse for about a minute or so, or until the mixture is crumbly. Add nuts and pulse a few more times. The mixture should look like wet sand with small chunks of nut. Refrigerate the mixture while preparing the filling.
  2. Preheat the oven to 375°F (190°C).
  3. Peel and quarter the apples. Cut out the core and slice into flat chunks.
  4. In a medium bowl, mix together apples, cranberries, sugar, lemon juice and zest. Pour the fruit mixture into 8-in (20cm) square dish, or 9-in (23cm) round deep pie pan. Evenly spread the topping over the fruit mixture.
  5. Bake for 40-45 minutes, or until the topping is the golden brown and the filling is bubbling. Serve warm with whipped cream or vanilla ice cream.

  3. I can just imagine how divine your kitchen smells! And I’m totally wishing I was actually there for a bite of this crisp! Apples and cranberries are such a great combo, and I think a combo that we don’t see too often in baked goods actually, which is a shame since you’ve proven here how spectacular it can be! I love the idea of enjoying it warm with a scoop of ice cream. Great tip on choosing sweet apples too because of the tartness from the cranberries – I prob would have overlooked that if I had just gone looking for apples  for this recipe without much thought! :p
