So were you affected by the snow storm this past weekend? I was kind of jealous seeing all the snow on TV and social media, cuz we were having unusually nice weather with sunshine and melting snow. It’s pretty darn weird for North Dakota, you know.

Snow or no snow, no difference to me though, I’m already hibernating with my little munchkin anyway! (Have you seen my snapchats lately? It’s all about baby snuggles! In case you didn’t know, my snapchat username: shineshka)

I could use an excuse to make a hearty soup. Actually, scratch that. I don’t need an excuse to make a hearty soup, especially when it comes to this creamy, rich ham, corn and potato soup! It’s like ham and potato soup meets corn chowder! So GOOD!!!

With so little hands-on time to dice up the veggies and ham, this soup couldn’t be easier! Just throw all the ingredients into the slow cooker and forget about it till dinner time!

Slow Cooker Ham, Corn and Potato Soup

Hearty creamy bowl of comfort! Slow cooker + simple ingredients = effortless dinner with minimal hands-on time!

Servings: 8 servings

Ingredients

  • 4 lbs 2kg potatoes (7-8 medium potatoes), washed and peeled
  • 1 lb 450gr ham
  • 3-4 ribs celery
  • 2 cups frozen sweet corn
  • 1/3 cup 40gr all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • 4 cups 1L chicken stock (or beef broth)
  • 3 sprigs of fresh thyme
  • ½ cup 120ml heavy whipping cream

Instructions 

  • Dice the potatoes, ham and celery.
  • Place the diced potatoes, ham, celery and sweet corn in a slow cooker. Stir in flour, salt, garlic powder and black pepper. Pour the chicken stock and add thyme. Cook for 4-5 hours on high, or 8-9 hours on low.
  • Using a potato masher, mash some of the potatoes to thicken the soup. Stir in the cream and adjust salt and pepper to your taste.

    Hi Shinee,  I made this recipe on Sunday and I finally used my slow cooker.  Had it for some time and thought I’d give it a try.  The soup was delicious.  It was so creamy and so easy to make. It was really cold outside and what a nice dish to have on this kind of day.  It hit the spot.  I love any kind of soup and I had all the ingredients on hand so that made it much easier.  For the first time using my slow cooker what a way to give it a try.  I can’t wait to make the beet borscht.  Thanks for a great recipe.  I’m glad your back and look forward to more great recipes.
